Carrot, Pineapple & Raisin Salad

This is a light, refreshing and energizing salad that is great for hot summer days by the pool. It’s also easy to make ahead of time and is  a perfect side dish or snack.

We made this for the first time in a dear friend’s house. Her kitchen was so bright and lovely, we took all these pictures there. Thanks, Lane!

Ingredients

  • 1c boiling water
  • 1/2c fresh organic raisins
  • 3c fresh organic carrots, shredded
  • 1/2c fresh organic pineapple, diced
  • 2T organic sugar or grade B maple syrup
  • 1/2c Veganaise

What we used for ours

Step 1: Soak raisins in boiled water for 15 mins

Step 2: Shred carrots by hand or with a food processor

Step 3: Mix sugar or maple syrup into Veganaise

Step 4: Fold soaked and drained raisins into Veganaise mixture

Step 5: Fold raisins/Veganaise mixture into carrots

Step 6: Dice pineapple and add to carrot/raisin mixture

Step 7: Chill for at least an hour prior to  your meal

Enjoy with a meal, other sides or by itself!
